 F-Series Sauvignon Blanc 2020 - Wine making - 

Grapes were either whole bunch pressed (90%), or destemmed and fermented on skins (10%).  Ferments started spontaneously in a mixture of 225L and 500L seasoned French oak and acacia  barrels where they were stored on gross lees for 10 months before being blended and bottled.

Framingham Sauvignon Blanc 2020 - Wine making

Each parcel of fruit is kept separate in the winery. Juices were predominately fermented in stainless steel using several different treatments, however 18% of the final wine was fermented in oak and acacia containers.  n full ferment lees for 6 months, the remainder on light lees.

Winemaking is all about preserving each site’s individual identity, so it’s kept simple.Juices from each vineyard are kept separate and fermented with an appropriate yeast in stainless steel tanks. Individual wines are then blended according to our idea of a complementary whole.
